Polysaccharide with strong shear-thinning behavior, with diverse application profiles

DISTINCTIVE STRENGTH

Helps particles stay suspended at rest, yet flows readily during pouring or pumping; viscosity recovers quickly after shear

How it is made

Xanthomonas campestris ferments carbohydrate feedstock, and xanthan gum is recovered from the broth, then dried and milled.

Applications

Dressings, sauces, beverages, gluten-free bakery and frozen foods; also personal care, cleaners and industrial suspensions.
